Ingredients

The cookies

  • 1 ½ tablespoons dry egg replacer
  • 4–8 tablespoons plant-based milk
  • 1 teaspoon vanilla
  • 1 cup dairy-free margarine spread
  • 1 cup organic cane sugar
  • 3 cups all-purpose flour

The icing

  • 2 cups powdered sugar
  • ¼ teaspoon vanilla
  • 1–4 tablespoons plant-based milk

Decorations (as desired)

  • Chocolate Chips
  • Sprinkles
  • Chopped Nuts
  • Seeds
  • Coconut, shredded
  • Raisins

Instructions

  1. Mix the egg replacer, 3 tablespoons of plant-based milk, and vanilla.
  2. Incorporate the margarine and sugar into the mixture.
  3. Stir in the flour until just combined, adding more plant-based milk as needed to form a smooth dough.
  4. Shape the dough into a circle, cover, and refrigerate for about 2 hours.
  5. Preheat the oven to 350°F.
  6. Roll out the dough to ¼-inch thickness on a floured surface.
  7. Cut out shapes using floured cookie cutters and place them on a baking sheet.
  8. Bake for 10 to 15 minutes until the cookies are golden.
  9. Allow the cookies to cool before icing.
  10. For the icing, mix powdered sugar with vanilla and enough plant-based milk to achieve a spreadable consistency.
  11. Decorate the cooled cookies with icing and desired decorations.
