Ingredients

The cookies

  • ½ cup vegan butter
  • ½ cup organic white granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons vegan milk
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ¼ teaspoon sea salt

The icing

  • 1 cup powdered sugar
  • 1 tablespoon vegan milk
  • 1 teaspoon lemon juice

Instructions

  1. Cream the vegan butter and sugar until fluffy.
  2. Add vanilla extract and vegan milk, and mix until combined.
  3. Sift together the flour, baking powder, baking soda, and sea salt.
  4. Combine the dry ingredients with the wet mixture and mix until a sticky dough forms.
  5. Roll out the dough to ¼-inch thickness and chill for at least 1 hour.
  6. Preheat the oven to 350°F (180°C).
  7. Cut shapes from the chilled dough and arrange on a baking sheet.
  8. Bake for about 10 minutes, then cool on a wire rack.
  9. Mix powdered sugar, vegan milk, and lemon juice to make icing.
  10. Decorate the cooled cookies with icing as desired.
