Instructions
- Cream the vegan butter and sugar until fluffy.
- Add vanilla extract and vegan milk, and mix until combined.
- Sift together the flour, baking powder, baking soda, and sea salt.
- Combine the dry ingredients with the wet mixture and mix until a sticky dough forms.
- Roll out the dough to ¼-inch thickness and chill for at least 1 hour.
- Preheat the oven to 350°F (180°C).
- Cut shapes from the chilled dough and arrange on a baking sheet.
- Bake for about 10 minutes, then cool on a wire rack.
- Mix powdered sugar, vegan milk, and lemon juice to make icing.
- Decorate the cooled cookies with icing as desired.
