Ingredients

  • 1 ¾ cups flour, sifted
  • ½ cup allulose
  • ¾ cup sugar free brown sugar
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 7 tablespoons coconut oil, melted and cooled
  • 4 tablespoons milk of choice
  • 1 teaspoon vanilla extract
  • 1 cup sugar free chocolate chips

Instructions

  1. Combine allulose, brown sugar substitute, and salt in a large mixing bowl.
  2. Add milk, melted coconut oil, and vanilla extract, and whisk until combined.
  3. Sift in the flour and baking soda, and mix until just combined.
  4. Fold in the chocolate chips using a rubber spatula.
  5. Cover the bowl and freeze the dough for 40 minutes.
  6. Preheat the oven to 350°F (180°C) and line a baking sheet with parchment paper.
  7. Form 12 small balls of cookie dough and place them on the prepared baking sheet, ensuring they are spaced apart.
  8. Bake the cookies for 11-14 minutes until golden brown, then cool on the tray for 10 minutes before transferring to a wire rack.
