Instructions
- 1. Whisk together the gluten-free flour, baking powder, and salt in a small bowl.
- 2. In a stand mixer, combine melted coconut oil, sugar, eggs, and vanilla extract, then mix in the dry ingredients until a uniform dough forms.
- 3. Shape the dough into 2 disks, wrap in wax paper, and refrigerate for 30 to 40 minutes.
- 4. Preheat the oven to 350°F and roll out one disk of dough to a thickness of ¼ inch.
- 5. Cut the cookies into shapes using cookie cutters and place them on a parchment-lined baking sheet.
- 6. Bake for 8 to 9 minutes until the cookies are set, then transfer to a cooling rack.
- 7. Prepare a simple syrup by boiling sugar and water, then brush it onto the cooled cookies and add sprinkles.
