Instructions
- Cream together the butter, egg, vanilla, and sugar in a mixing bowl.
- Add the flour blend, baking powder, and salt, mixing until a dough forms.
- Cover the dough and chill in the refrigerator for 1-2 hours.
- Preheat the oven to 350°F and line baking sheets with parchment paper.
- Roll out the chilled dough to ¼-inch thickness and cut out shapes.
- Transfer the cookie shapes to the baking sheets, spacing them apart.
- Bake until light golden on the bottoms, about 8-12 minutes.
- Let cool on the baking sheets for 5 minutes before transferring to a wire rack.
- For the frosting, mix powdered sugar, butter, heavy cream, and vanilla until creamy.
- Pipe the frosting onto cooled cookies and sprinkle with coarse sugar if desired.
