Ingredients

The Cookies

  • ½ cup unsalted butter, softened
  • 1 unit egg
  • 1 teaspoon pure vanilla extract
  • 1 cup cane sugar
  • 2 cups gluten-free flour blend
  • 2 teaspoons baking powder
  • teaspoon fine salt

The Frosting

  • 1 cup powdered sugar
  • ¼ cup unsalted butter, softened
  • tablespoons heavy whipping cream
  • 1 teaspoon pure vanilla extract
  • optional unit coarse sugar or sanding sugar

Instructions

  1. Cream together the butter, egg, vanilla, and sugar in a mixing bowl.
  2. Add the flour blend, baking powder, and salt, mixing until a dough forms.
  3. Cover the dough and chill in the refrigerator for 1-2 hours.
  4. Preheat the oven to 350°F and line baking sheets with parchment paper.
  5. Roll out the chilled dough to ¼-inch thickness and cut out shapes.
  6. Transfer the cookie shapes to the baking sheets, spacing them apart.
  7. Bake until light golden on the bottoms, about 8-12 minutes.
  8. Let cool on the baking sheets for 5 minutes before transferring to a wire rack.
  9. For the frosting, mix powdered sugar, butter, heavy cream, and vanilla until creamy.
  10. Pipe the frosting onto cooled cookies and sprinkle with coarse sugar if desired.
