Gluten-Free Sugar Cookies

Ingredients

  • ½ cup unsalted butter (softened)
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 cups gluten-free baking mix
  • cup milk

Instructions

  1. 1. In a large mixing bowl, beat together the softened butter and sugar until creamy.
  2. 2. Add the egg and vanilla extract, mixing well and scraping the sides of the bowl as needed.
  3. 3. Alternate adding the gluten-free baking mix and milk until a thick dough forms.
  4. 4. Cover the dough and refrigerate for at least 2-3 hours, preferably overnight.
  5. 5. Preheat the oven to 375°F (190°C).
  6. 6. Scoop rounded tablespoon amounts of dough and roll them into balls, placing them 2 inches apart on a baking pan.
  7. 7. Bake for 10-12 minutes until slightly golden around the edges and puffy but not overly colored.
  8. 8. Allow to set on the pan for a few minutes before transferring to a cooling rack.
