Gluten-Free Sugar Cookies

Instructions
- 1. In a large mixing bowl, beat together the softened butter and sugar until creamy.
- 2. Add the egg and vanilla extract, mixing well and scraping the sides of the bowl as needed.
- 3. Alternate adding the gluten-free baking mix and milk until a thick dough forms.
- 4. Cover the dough and refrigerate for at least 2-3 hours, preferably overnight.
- 5. Preheat the oven to 375°F (190°C).
- 6. Scoop rounded tablespoon amounts of dough and roll them into balls, placing them 2 inches apart on a baking pan.
- 7. Bake for 10-12 minutes until slightly golden around the edges and puffy but not overly colored.
- 8. Allow to set on the pan for a few minutes before transferring to a cooling rack.
