Instructions
- Soften the butter and egg before starting.
- In a large mixing bowl, beat the softened butter until creamy, then add sugar, vanilla, and the egg, mixing well.
- Combine baking powder and salt, then mix into the batter.
- Gradually add almond flour, potato starch, and arrowroot starch, mixing until a moldable dough forms.
- Chill the dough for 30 minutes in the freezer or overnight in the refrigerator.
- Preheat the oven to 350°F (176°C) and line baking sheets with parchment paper.
- Roll out the chilled dough on a floured surface and cut out shapes with cookie cutters.
- Transfer cookies to the baking sheet and bake for 8-10 minutes until just set.
- Let cookies cool on the tray for a few minutes before transferring to a cooling rack.
- For frosting, beat softened butter, then gradually add powdered sugar and vanilla, adjusting consistency with almond milk.
