Ingredients

The cookies

  • ½ cup softened dairy-free butter
  • 1 small chicken egg
  • cup organic cane sugar
  • 1 tsp pure vanilla extract
  • ¾ tsp baking powder
  • ¼ tsp sea salt
  • 2 ⅓ cups almond flour
  • ¾ cup potato starch
  • ¾ cup arrowroot starch

The frosting (optional)

  • ½ cup softened dairy-free butter
  • ¼ tsp vanilla extract
  • 1 ½ – 2 cups sifted organic powdered sugar
  • 1-2 Tbsp unsweetened almond milk
  • to taste natural food dyes

Instructions

  1. Soften the butter and egg before starting.
  2. In a large mixing bowl, beat the softened butter until creamy, then add sugar, vanilla, and the egg, mixing well.
  3. Combine baking powder and salt, then mix into the batter.
  4. Gradually add almond flour, potato starch, and arrowroot starch, mixing until a moldable dough forms.
  5. Chill the dough for 30 minutes in the freezer or overnight in the refrigerator.
  6. Preheat the oven to 350°F (176°C) and line baking sheets with parchment paper.
  7. Roll out the chilled dough on a floured surface and cut out shapes with cookie cutters.
  8. Transfer cookies to the baking sheet and bake for 8-10 minutes until just set.
  9. Let cookies cool on the tray for a few minutes before transferring to a cooling rack.
  10. For frosting, beat softened butter, then gradually add powdered sugar and vanilla, adjusting consistency with almond milk.
