Ingredients

The cookie dough

  • ½ cup butter, softened
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 2 ¾ cups oat flour (certified gluten-free, if needed)
  • ½ teaspoon baking powder
  • ¼ teaspoon fine sea salt

Optional frosting

  • 1 cup powdered sugar
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract
  • 3 to 4 teaspoons water (as needed to thin)

Instructions

  1. Preheat the oven to 350ºF and line a baking sheet with parchment paper.
  2. In a large bowl, combine the butter and sugar, then mix well.
  3. Add the egg, vanilla extract, and almond extract, and mix until smooth.
  4. Add the oat flour, baking powder, and salt, stirring until the dough is thick and uniform.
  5. Chill the dough in the fridge for 15 minutes.
  6. Roll out the chilled dough between two pieces of parchment paper to about 1/4-inch thick.
  7. Cut out shapes with cookie cutters and transfer them to the baking sheet, spacing them about 1 inch apart.
  8. Bake for 7 to 10 minutes, depending on desired crispness.
  9. Let the cookies cool on the pan for 10 to 15 minutes before transferring to a wire rack.
  10. Decorate with frosting if desired, then store in an airtight container.
