Instructions
- Preheat the oven to 350ºF and line a baking sheet with parchment paper.
- In a large bowl, combine the butter and sugar, then mix well.
- Add the egg, vanilla extract, and almond extract, and mix until smooth.
- Add the oat flour, baking powder, and salt, stirring until the dough is thick and uniform.
- Chill the dough in the fridge for 15 minutes.
- Roll out the chilled dough between two pieces of parchment paper to about 1/4-inch thick.
- Cut out shapes with cookie cutters and transfer them to the baking sheet, spacing them about 1 inch apart.
- Bake for 7 to 10 minutes, depending on desired crispness.
- Let the cookies cool on the pan for 10 to 15 minutes before transferring to a wire rack.
- Decorate with frosting if desired, then store in an airtight container.
