Instructions
- Preheat the oven to 350°F (176°C) and line a baking sheet with parchment paper.
- In a deep bowl, beat the butter and sweetener together until fluffy.
- Beat in the eggs, vanilla, baking powder, and sea salt.
- Gradually mix in the coconut flour until a dough forms.
- Sprinkle the xanthan gum over the dough and mix in, then let it sit to thicken.
- Scoop the dough onto the baking sheet and flatten to about ¼ inch thick.
- Bake for 7-8 minutes until the cookies start to firm up but are still soft.
- Allow the cookies to cool completely before moving or frosting them.
- If desired, prepare the cream cheese frosting and spread it on the cookies, then add sprinkles.
