Instructions
- Preheat the oven to 350°F (177°C) and line a large cookie sheet with parchment paper.
- Beat together the butter, cream cheese, and sweetener until fluffy and light in color.
- Add the vanilla extract, salt, and egg, mixing well. If using, add the sour cream.
- Gradually mix in the almond flour until a soft dough forms. If the dough is too sticky, refrigerate for 30 minutes.
- Scoop balls of dough onto the prepared cookie sheet using a medium cookie scoop and flatten with your palm.
- Bake for about 12-15 minutes until the edges are lightly golden. Allow to cool completely before handling.
