Instructions
- Pulse together the powdered sweetener, cocoa powder, and salt in a food processor until uniform.
- Add the cookie butter and vanilla, then process until smooth, scraping down the sides as needed.
- Pulse in the chopped almonds until just combined, being careful not to overmix.
- Line a cookie sheet with parchment paper and use a cookie scoop to form the dough into balls, pressing them into shape.
- Refrigerate the cookies for at least 30 minutes to firm up.
