Instructions
- Preheat the oven to 350°F (177°C) and line a cookie sheet with parchment paper.
- Beat the softened butter and brown sweetener together until fluffy.
- Add the egg and vanilla extract, and mix well.
- Gradually mix in the almond flour and salt.
- If using, sprinkle the xanthan gum over the dough and mix in.
- Fold in the white chocolate chips and chopped macadamia nuts.
- Drop rounded tablespoonfuls of dough onto the prepared cookie sheet and flatten slightly.
- Bake for about 12 minutes until the edges are golden, then let cool completely before handling.
