Instructions
- Preheat the oven to 350°F (175°C).
- Cream the butter and sweetener together in a mixing bowl for about 2 minutes.
- Add the egg, vanilla, and lemon juice, then blend until light and fluffy.
- Incorporate half of the almond flour and mix.
- Add the remaining almond flour, cinnamon, salt, and baking soda, then mix again.
- Fold in the white chocolate chips and macadamia nuts.
- Line a baking sheet with a silicone mat.
- Roll the dough into balls and flatten slightly.
- Bake for 8-12 minutes until golden brown on the edges.
- Cool on the baking mat for 5 minutes before transferring to a cooling rack.
