Ingredients

The dough

  • 6 tablespoons unsalted butter, softened
  • cup sweetener
  • 1 large egg
  • teaspoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • cups blanched almond flour
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt

The mix-ins

  • 1 cup white chocolate chips
  • ½ cup chopped macadamia nuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream the butter and sweetener together in a mixing bowl for about 2 minutes.
  3. Add the egg, vanilla, and lemon juice, then blend until light and fluffy.
  4. Incorporate half of the almond flour and mix.
  5. Add the remaining almond flour, cinnamon, salt, and baking soda, then mix again.
  6. Fold in the white chocolate chips and macadamia nuts.
  7. Line a baking sheet with a silicone mat.
  8. Roll the dough into balls and flatten slightly.
  9. Bake for 8-12 minutes until golden brown on the edges.
  10. Cool on the baking mat for 5 minutes before transferring to a cooling rack.
