Ingredients

The cookie dough

  • 1 egg egg (room temp)
  • ¼ cup honey
  • ¼ cup melted coconut oil
  • 1 tsp vanilla
  • 2 cups almond flour
  • ½ tsp baking powder
  • ¼ tsp salt

The mix-ins

  • ¾ cup chopped macadamia nuts
  • ¾ cup chopped white chocolate

Instructions

  1. Preheat your oven to 350°F.
  2. In a large bowl, mix the egg, honey, coconut oil, and vanilla until combined.
  3. In a small bowl, combine the almond flour, salt, and baking powder.
  4. Add the dry ingredients to the wet mixture and stir until combined.
  5. Fold in the macadamia nuts and white chocolate, reserving some for topping.
  6. Chill the dough in the refrigerator for 30 minutes.
  7. Scoop out about 2 tablespoons of dough and flatten slightly on a baking sheet.
  8. Top with reserved nuts and chocolate.
  9. Bake for 11-13 minutes or until golden brown.
  10. Allow to cool before storing in an airtight container.
