Lemon White Chocolate Macadamia Nut Cookies

Ingredients

  • 3 Tbsp arrowroot flour
  • 3 Tbsp water
  • ½ cup macadamia nut butter
  • ½ cup oat flour
  • ¼ cup almond flour
  • ¼ cup tapioca flour
  • ¼ cup granulated sugar or sweetener of choice
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 Tbsp lemon zest
  • 2 Tbsp lemon juice
  • ¼ cup macadamia nuts, chopped
  • ¼ cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a cookie sheet with parchment paper or grease it.
  2. Mix the arrowroot flour and water in a small bowl and set aside.
  3. Process ½ cup of macadamia nuts in a food processor until smooth, adding oil if necessary.
  4. In a large bowl, whisk together the oat flour, almond flour, tapioca flour, sweetener, baking soda, and salt.
  5. Add the macadamia nut butter and the arrowroot mixture to the dry ingredients.
  6. Zest and juice the lemon, then add to the mixture.
  7. Scoop 1 Tbsp of dough onto the baking tray, spacing them 2 inches apart.
  8. Bake for 9 minutes until slightly hard on top.
  9. Cool on the tray briefly before transferring to a wire rack to cool completely.
