Instructions
- Preheat the oven to 350°F and prepare a cookie sheet.
- Mix the arrowroot flour and water in a small bowl and set aside.
- In a food processor, blend the macadamia nuts until smooth, adding oil if necessary.
- In a large bowl, whisk together the oat flour, almond flour, tapioca flour, sweetener, baking soda, and salt.
- Add the macadamia nut butter and arrowroot mixture to the dry ingredients.
- Zest and juice the lemon, then incorporate into the dough.
- Scoop out tablespoon-sized portions of dough onto the baking tray, spacing them apart.
- Bake for 9 minutes until slightly hard on top.
- Allow to cool on the tray before transferring to a wire rack.
