Ingredients

  • 3 Tbsp arrowroot flour
  • 3 Tbsp water
  • ½ cup macadamia nut butter
  • ½ cup oat flour
  • ¼ cup almond flour
  • ¼ cup tapioca flour
  • ¼ cup granulated sugar/sweetener of choice
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 Tbsp lemon zest
  • 2 Tbsp lemon juice
  • ¼ cup macadamia nuts, chopped
  • ¼ cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F and prepare a cookie sheet.
  2. Mix the arrowroot flour and water in a small bowl and set aside.
  3. In a food processor, blend the macadamia nuts until smooth, adding oil if necessary.
  4. In a large bowl, whisk together the oat flour, almond flour, tapioca flour, sweetener, baking soda, and salt.
  5. Add the macadamia nut butter and arrowroot mixture to the dry ingredients.
  6. Zest and juice the lemon, then incorporate into the dough.
  7. Scoop out tablespoon-sized portions of dough onto the baking tray, spacing them apart.
  8. Bake for 9 minutes until slightly hard on top.
  9. Allow to cool on the tray before transferring to a wire rack.
