Instructions
- Preheat the oven to 350°F (177°C) and line a baking sheet with parchment paper.
- In a large bowl, beat together the softened butter, Besti Monk Fruit, and Besti Brown until fluffy.
- Add the egg and vanilla extract, and mix until combined.
- Gradually add the almond flour, mixing in ½ cup at a time, followed by the salt.
- Sprinkle the xanthan gum over the dough and mix until fully incorporated.
- Fold in the sugar-free chocolate chips until evenly distributed.
- Scoop rounded portions of the dough onto the baking sheet and flatten each cookie to about ⅓ inch thick.
- Bake for 10 to 14 minutes, until the edges are golden. Allow to cool completely before handling.
