Ingredients

The cookie dough

  • ½ cup unsalted butter, softened
  • cup low carb brown sugar (Sukrin Gold, Swerve Brown, Lakanto Golden)
  • ¼ cup low carb sugar (low carb granulated sugar replacement)
  • 2 teaspoons vanilla extract
  • 1 cup almond flour
  • 2 tablespoons oat fiber
  • 2 teaspoons beef gelatin
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • 1 large egg

The mix-ins

  • cup sliced almonds
  • ½ cup walnut pieces
  • ½ cup Lily's Chocolate Chips

Instructions

  1. Preheat the oven to 340°F and line baking sheets with parchment paper.
  2. Chop the almonds and walnuts into small pieces.
  3. In a bowl, whisk together almond flour, oat fiber, gelatin, salt, and baking soda.
  4. Cream the butter, vanilla, low carb brown sugar, and granulated sugar until light and fluffy.
  5. Add the dry ingredients to the butter mixture and mix until fully incorporated.
  6. Beat in the egg, then fold in the nuts and chocolate chips.
  7. Scoop dough onto the baking sheets, spacing them 2 inches apart.
  8. Bake for 6 minutes, then tap the pan on the counter to flatten the cookies.
  9. Return to the oven and bake for an additional 6-8 minutes.
  10. Let cool for at least 5 minutes before transferring to a cooling rack.
