Instructions
- Preheat the oven to 180C/350F and line a baking sheet with parchment paper.
- In a large bowl, combine cashew butter, allulose, egg, baking soda, and vanilla extract, mixing until just combined.
- Fold in the chocolate chips.
- Form 12 balls of cookie dough and place them on the lined baking sheet, pressing each ball into a thick cookie shape.
- Bake for 10-12 minutes until the edges start to brown.
- Remove from the oven and let cool completely on the tray.
