Ingredients

  • 6 tablespoons unsalted butter
  • ¾ cup sweetener
  • 1 large egg
  • teaspoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • cups blanched almond flour
  • cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Cream the butter and sweetener in a mixing bowl for about 2 minutes.
  3. Add the egg, vanilla, and lemon juice, then blend until light and fluffy.
  4. Incorporate half of the almond flour and mix.
  5. Add the remaining almond flour, cocoa powder, salt, and baking soda, then mix again.
  6. Fold in the chocolate chips.
  7. Line a baking sheet with a silicone mat.
  8. Roll the dough into balls and flatten slightly.
  9. Bake for 10-15 minutes until the edges are set but the centers appear soft.
  10. Cool on the baking mat for 5 minutes before transferring to a cooling rack.
