Ingredients

The cookie dough

  • ¾ cup sweetener
  • ½ cup butter
  • 1 unit egg
  • 1 teaspoon vanilla extract
  • 1 ½ cups blanched almond flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt

The chocolate chips

  • ¾ cup sugar-free chocolate chips

Instructions

  1. Preheat the oven to 350°F.
  2. Line a cookie sheet with a silicone baking mat.
  3. Mix the sweetener and butter in a bowl using a hand mixer.
  4. Add the egg and vanilla extract, and mix again.
  5. In a separate bowl, combine the almond flour, baking soda, and salt.
  6. Add the dry ingredients to the wet mixture and mix well.
  7. Fold in the chocolate chips.
  8. Scoop 10-12 cookie balls onto the cookie sheet.
  9. Bake for 12-15 minutes until the edges begin to brown.
  10. Allow the cookies to cool on the sheet for 10 minutes before transferring them to a wire rack.
