Instructions
- Preheat the oven to 350°F.
- Line a cookie sheet with a silicone baking mat.
- Mix the sweetener and butter in a bowl using a hand mixer.
- Add the egg and vanilla extract, and mix again.
- In a separate bowl, combine the almond flour, baking soda, and salt.
- Add the dry ingredients to the wet mixture and mix well.
- Fold in the chocolate chips.
- Scoop 10-12 cookie balls onto the cookie sheet.
- Bake for 12-15 minutes until the edges begin to brown.
- Allow the cookies to cool on the sheet for 10 minutes before transferring them to a wire rack.
