Ingredients

The dough

  • ½ cup unsalted butter, softened
  • cup low carb brown sugar (Sukrin Gold, Swerve Brown, Lakanto Golden)
  • ¼ cup low carb granulated sugar replacement
  • 2 teaspoon vanilla extract
  • 1 cup almond flour
  • 2 tablespoon oat fiber
  • 2 teaspoon beef gelatin
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • 1 large egg

The mix-ins

  • cup sliced almonds
  • ½ cup walnut pieces
  • ½ cup Lily's Chocolate Chips

Instructions

  1. Preheat the oven to 340°F and prepare baking sheets with parchment paper.
  2. Chop the almonds and walnuts into small pieces.
  3. In a bowl, whisk together almond flour, oat fiber, gelatin, salt, and baking soda.
  4. Cream the butter with vanilla, low carb brown sugar, and granulated sugar until fluffy.
  5. Mix in the dry ingredients until fully incorporated, then add the egg and mix well.
  6. Fold in the nuts and chocolate chips until evenly distributed.
  7. Scoop the dough onto the baking sheets, spacing them about 2 inches apart.
  8. Bake for 6 minutes, then tap the pan on the counter to flatten the cookies and bake for an additional 6-8 minutes.
  9. Let the cookies cool for at least 5 minutes before transferring them to a cooling rack.
