Instructions
- Preheat the oven to 340°F and prepare baking sheets with parchment paper.
- Chop the almonds and walnuts into small pieces.
- In a bowl, whisk together almond flour, oat fiber, gelatin, salt, and baking soda.
- Cream the butter with vanilla, low carb brown sugar, and granulated sugar until fluffy.
- Mix in the dry ingredients until fully incorporated, then add the egg and mix well.
- Fold in the nuts and chocolate chips until evenly distributed.
- Scoop the dough onto the baking sheets, spacing them about 2 inches apart.
- Bake for 6 minutes, then tap the pan on the counter to flatten the cookies and bake for an additional 6-8 minutes.
- Let the cookies cool for at least 5 minutes before transferring them to a cooling rack.
