Ingredients

The squash

  • 1 medium Buttercup squash (3-4 pounds)

The seasoning

  • ¼ cup Olive oil
  • ½ tbsp Garlic powder (optional)
  • ½ tbsp Dried thyme (optional)
  • ¾ tsp Sea salt
  • ¼ tsp Black pepper

The optional coating

  • cup Grated parmesan cheese (optional)

Instructions

  1. Preheat the oven to 425°F (218°C) and prepare a baking sheet.
  2. Cut off the ends of the squash and slice it in half, removing the seeds.
  3. Cut the squash into 1-inch wedges.
  4. Arrange the wedges on the baking sheet in a single layer.
  5. Drizzle with olive oil and sprinkle with garlic powder, thyme, salt, pepper, and parmesan cheese if using.
  6. Roast in the oven for 25-30 minutes, flipping halfway through, until tender and browned.
