Mediterranean Potato Salad

Ingredients

The salad

  • 2 lbs red potatoes
  • ½ cup Kalamata olives, chopped
  • 1 small cucumber, chopped
  • 1 medium red pepper, chopped
  • 2 tbs diced red onion
  • 1 cup cherry tomatoes, sliced in half
  • 4 leaves basil for garnish

The dressing

  • 3 tbs olive oil
  • 1 tbs lemon juice
  • 1 tbs red wine vinegar
  • ¼ tsp dried oregano
  • ¼ tsp onion powder
  • ¼ tsp salt
  • ¼ tsp pepper

Instructions

  1. Boil the potatoes until tender but not mushy.
  2. Prepare the other salad ingredients and combine them in a large bowl, excluding the basil.
  3. Mix the dressing ingredients in a small bowl until well combined.
  4. Once the potatoes are cool enough to handle but still warm, cut them into bite-sized pieces and add to the large bowl.
  5. Pour the dressing over the potato salad and stir gently.
  6. Garnish with chopped fresh basil and serve warm or at room temperature.
