Mediterranean Potato Salad

The dressing

Instructions
- Boil the potatoes until tender but not mushy.
- Prepare the other salad ingredients and combine them in a large bowl, excluding the basil.
- Mix the dressing ingredients in a small bowl until well combined.
- Once the potatoes are cool enough to handle but still warm, cut them into bite-sized pieces and add to the large bowl.
- Pour the dressing over the potato salad and stir gently.
- Garnish with chopped fresh basil and serve warm or at room temperature.
