Italian Style Potato Salad

Instructions
- 1. Boil the quartered potatoes in salted water until fork tender, about 10 minutes. Drain and set aside.
- 2. In a large bowl, combine the garlic, onion, artichokes, and olives.
- 3. Add the drained potatoes to the bowl and season with vinegar, olive oil, parsley, salt, and pepper.
- 4. Taste and adjust seasonings as needed, then serve.
