Italian Style Potato Salad

Ingredients

  • 1.5 lbs little potatoes, quartered
  • 1 clove garlic, crushed
  • ½ cup red onion, diced
  • 1 cup canned artichoke hearts, drained and chopped
  • cup Kalamata olives, sliced
  • 2 tbsp rice wine vinegar
  • 3 tbsp extra virgin olive oil
  • 1 handful fresh chopped parsley
  • to taste salt and pepper

Instructions

  1. 1. Boil the quartered potatoes in salted water until fork tender, about 10 minutes. Drain and set aside.
  2. 2. In a large bowl, combine the garlic, onion, artichokes, and olives.
  3. 3. Add the drained potatoes to the bowl and season with vinegar, olive oil, parsley, salt, and pepper.
  4. 4. Taste and adjust seasonings as needed, then serve.
