Instructions
- Prepare the vegetables and tofu, soaking bamboo skewers in water if using.
- Thread the skewers with the vegetables and tofu, alternating ingredients for variety.
- Make the buffalo sauce by mixing oil (if using), vinegar, ketchup, water, and maple syrup (if using) until smooth, then add garlic powder, paprika, and salt (if using). Adjust hot sauce to taste.
- Brush the skewers with buffalo sauce and marinate in the fridge for about 1 hour.
- Preheat the grill and cook the skewers until golden brown, turning occasionally.
- Serve with vegan ranch dressing and sprinkle with fresh dill or parsley if desired.
