Buffalo Cauliflower Tofu Skewers

Ingredients

The skewers

  • 1 medium head cauliflower, cut into small florets
  • 3 stalks celery, cut into 2-inch pieces
  • 1 bell pepper yellow or orange, sliced into large chunks
  • 1 red onion sliced into wedges
  • 1 16-ounce package extra firm tofu, pressed and sliced into chunks
  • 8 large skewers (bamboo or metal)

The buffalo sauce

  • 2 tablespoons vegetable oil (optional)
  • 2 tablespoons white vinegar
  • 3 tablespoons ketchup
  • 1 ½ tablespoons water
  • 1 tablespoon pure maple syrup (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt (optional)
  • 1–4 tablespoons hot sauce (per personal spice preference level)

The toppings (optional)

  • ½ cup vegan ranch dressing
  • ¼ cup chopped fresh dill or parsley

Instructions

  1. Prepare the vegetables and tofu, soaking bamboo skewers in water if using.
  2. Thread the skewers with the vegetables and tofu, alternating ingredients for variety.
  3. Make the buffalo sauce by mixing oil (if using), vinegar, ketchup, water, and maple syrup (if using) until smooth, then add garlic powder, paprika, and salt (if using). Adjust hot sauce to taste.
  4. Brush the skewers with buffalo sauce and marinate in the fridge for about 1 hour.
  5. Preheat the grill and cook the skewers until golden brown, turning occasionally.
  6. Serve with vegan ranch dressing and sprinkle with fresh dill or parsley if desired.
