Ingredients

The batter

  • cup all-purpose flour
  • ¼ cup cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon sea salt
  • ¾ cup water

The cauliflower

  • 1 head cauliflower

For serving

  • to taste Buffalo Sauce
  • optional Vegan Ranch

Instructions

  1. Preheat the oven to 450°F and line two large baking sheets with parchment paper.
  2. In a large bowl, whisk together the flour, cornstarch, garlic powder, onion powder, paprika, and salt. Add the water and whisk until smooth.
  3. Add the cauliflower florets to the batter and stir to coat.
  4. Lift the cauliflower out of the batter, allowing excess to drip back into the bowl, and arrange in a single layer on the baking sheets.
  5. Bake for 10 minutes, then carefully flip the florets and bake for another 10 minutes, swapping the pans on the oven racks.
  6. Remove from the oven and brush with some Buffalo sauce. Bake for an additional 12 to 15 minutes until dark and crisp.
  7. Remove from the oven and brush with more Buffalo sauce. Serve with Vegan Ranch if desired.
