Ingredients

The batter

  • cup all-purpose flour
  • ¼ cup cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon sea salt
  • ¾ cup water

The cauliflower

  • 1 large cauliflower (about 2 pounds)

The sauce

  • to taste Buffalo sauce

Optional dipping

  • to taste Ranch dressing or vegan ranch

Instructions

  1. Preheat the oven to 450°F and line two large baking sheets with parchment paper.
  2. Whisk together the flour, cornstarch, garlic powder, onion powder, paprika, and salt in a large bowl.
  3. Add water and whisk until smooth, then stir in the cauliflower florets to coat.
  4. Lift the florets out of the batter, allowing excess to drip back, and arrange in a single layer on the baking sheets.
  5. Bake for 10 minutes, then carefully flip the florets and bake for another 10 minutes.
  6. Remove from the oven and brush with buffalo sauce, then bake for an additional 12 to 15 minutes until dark and crisp.
  7. Brush with more buffalo sauce before serving, optionally with ranch dressing for dipping.
