Ingredients

The batter

  • ¾ cup skim milk
  • ¾ cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon olive oil

The cauliflower

  • 1 ½ lbs cauliflower florets

The coating

  • ½ cup panko breadcrumbs
  • cup Buffalo wing sauce

Instructions

  1. Preheat the oven to 450°F and prepare a baking sheet with parchment paper or aluminum foil.
  2. In a mixing bowl, whisk together the milk, flour, garlic powder, and olive oil until smooth.
  3. Add the cauliflower florets to the bowl and stir to coat them with the batter.
  4. Transfer the coated florets to another bowl, shaking off excess batter, then add panko breadcrumbs and toss to coat.
  5. Place the coated florets on the prepared baking sheet in a single layer and bake for 15 minutes.
  6. Remove from the oven, drizzle with Buffalo wing sauce, and toss to coat.
  7. Return to the oven and bake for an additional 5-10 minutes until crispy.
