Ingredients

Crust

  • 6 ounces chocolate wafers
  • ½ cup roasted peanuts
  • 4 tablespoons butter
  • 2 tablespoons honey

Cream Pie Filling

  • ½ cup granulated sugar
  • 2 tablespoons flour
  • 2 tablespoons cornstarch
  • ¼ teaspoon salt
  • 4 large egg yolks
  • 1 vanilla bean seeds removed
  • 3 cups whole milk
  • 4 tablespoons butter

Topping

  • 3 cups heavy whipping cream
  • 4 ounces dark chocolate or semi-sweet chocolate
  • 2-3 large bananas, sliced
  • to taste chopped peanuts

Chocolate Shell (optional)

  • 3.5 ounces semi-sweet or dark chocolate
  • 1 tablespoon coconut oil

Instructions

  1. Prepare the crust by blending chocolate wafers, peanuts, melted butter, and honey until finely ground, then press into a pie dish.
  2. For the filling, whisk together sugar, flour, cornstarch, and salt in a saucepan, then add egg yolks and combine.
  3. Stir in milk and vanilla seeds, then cook over medium heat until thickened, about 8 minutes. Remove from heat and stir in butter.
  4. Pour the pudding into the crust and chill for at least 4 hours.
  5. Whip the cream until stiff peaks form, then mix in melted chocolate with part of the whipped cream.
  6. Layer sliced bananas over the chilled pudding, add the chocolate cream, and top with remaining whipped cream.
  7. Optionally, prepare the chocolate shell by melting chocolate and coconut oil together, then drizzle over the pie and sprinkle with peanuts.
  8. Slice and serve.
