Ingredients

The base

  • 1 cup raw cashews
  • 2 tbsp butter or extra virgin olive oil
  • 1 medium onion, diced
  • 4 medium carrots, diced small
  • 4 ribs celery, diced
  • 5 cloves garlic, minced
  • 1 ¼ tsp kosher salt
  • to taste freshly ground black pepper

The flavorings

  • 1 tsp dried thyme
  • ½ tsp dried sage

The main ingredients

  • 4 cups vegetable or chicken broth
  • ¾ cup wild rice blend
  • 1 lb chicken breast
  • 1 tbsp reduced sodium soy sauce

Instructions

  1. Soak cashews in hot water.
  2. Sauté onion, carrots, celery, garlic, salt, and pepper for 5 minutes.
  3. Add thyme, sage, broth, and rice; bring to a boil, then simmer for 35 minutes.
  4. Add raw chicken and cook for another 20 minutes.
  5. Remove chicken to cool, then shred it.
  6. Blend soaked cashews with water until smooth, then add to the soup along with soy sauce and season to taste.
