Spring Salad with Strawberry Lemon Basil Dressing

Ingredients

Dressing

  • 1 cup fresh strawberries
  • ¼ cup packed fresh basil
  • 3 tbsp fresh lemon juice
  • 1 tbsp extra virgin olive oil
  • 1-2 tsp pure maple syrup
  • to taste fine grain sea salt
  • to taste black pepper

Salad

  • to taste slivered almonds, toasted
  • to taste shredded unsweetened coconut, toasted
  • to taste mixed greens
  • to taste strawberries, chopped
  • to taste chiffonade fresh basil

Instructions

  1. Preheat the oven to 300°F and toast the almonds for 7-8 minutes, then add the coconut and toast for another 2-4 minutes.
  2. In a food processor, combine strawberries, basil, lemon juice, and olive oil, and process until smooth.
  3. Add salt, pepper, and maple syrup to taste, and process again.
  4. Assemble the salad with the desired ingredients and serve with the dressing.
