Thai Cashew Chicken

The chicken and vegetables

The sauce

soy sauce

fish sauce

Instructions
- Mix all the ingredients for the sauce together until the sugar is dissolved and set aside.
- Heat oil in a skillet over high heat and cook the chicken until browned.
- Push the chicken to one side and add garlic and onion, sautéing for 30 seconds.
- Add bell peppers and cashew nuts, stir-frying with the chicken.
- Pour in the sauce and add scallions, stirring to combine.
- Turn off the heat and serve immediately with steamed rice.
