Thai Cashew Chicken

Ingredients

The chicken and vegetables

  • 10 oz boneless, skinless chicken breast, cut into thin pieces
  • 2 tablespoons oil
  • 2 cloves garlic, minced
  • ½ small onion, cut into pieces
  • ½ small red bell pepper, cut into pieces
  • ½ small green bell pepper, cut into pieces
  • ¾ cup cashew nuts
  • 2 stalks scallion, cut into strips

The sauce

  • 1 tablespoon soy sauce
  • tablespoons fish sauce
  • 1 tablespoon sugar
  • 4 tablespoons water

Instructions

  1. Mix all the ingredients for the sauce together until the sugar is dissolved and set aside.
  2. Heat oil in a skillet over high heat and cook the chicken until browned.
  3. Push the chicken to one side and add garlic and onion, sautéing for 30 seconds.
  4. Add bell peppers and cashew nuts, stir-frying with the chicken.
  5. Pour in the sauce and add scallions, stirring to combine.
  6. Turn off the heat and serve immediately with steamed rice.
