Ingredients

The noodles

  • 3 medium Zucchini

The sauce

  • 1 tsp Unsalted butter
  • 2 cloves Garlic (minced)
  • ¼ tsp Nutmeg
  • ½ cup Unsweetened almond milk
  • cup Heavy cream
  • ¾ cup Grated parmesan cheese
  • 1 tbsp Arrowroot powder
  • to taste Black pepper

Instructions

  1. Spiralize the zucchini to make noodles.
  2. Melt butter in a skillet over medium heat and sauté garlic until fragrant.
  3. Reduce heat and stir in almond milk, heavy cream, and nutmeg, bringing to a gentle simmer.
  4. Whisk arrowroot powder with water until smooth, then add to the sauce along with parmesan cheese and black pepper, stirring until thickened.
  5. Pat the zucchini noodles dry, add to the pan, and stir-fry until barely softened.
  6. Combine the zoodles with the sauce and serve immediately.
