Instructions
- Spiralize the zucchini to make noodles.
- Melt butter in a skillet over medium heat and sauté garlic until fragrant.
- Reduce heat and stir in almond milk, heavy cream, and nutmeg, bringing to a gentle simmer.
- Whisk arrowroot powder with water until smooth, then add to the sauce along with parmesan cheese and black pepper, stirring until thickened.
- Pat the zucchini noodles dry, add to the pan, and stir-fry until barely softened.
- Combine the zoodles with the sauce and serve immediately.
