The Zoodles

The Shrimp

  • 1 pound shrimp, peeled and deveined
  • 1 tablespoon minced garlic
  • 1 tablespoon olive oil

The Sauce

  • 2 tablespoons butter
  • ½ cup heavy cream
  • 4 ounces cream cheese, cut into chunks
  • ½ cup Parmesan reggiano cheese, shredded
  • ¼ teaspoon red pepper flakes
  • to taste salt and pepper
  • to garnish parsley

Instructions

  1. Prepare the zucchini noodles by placing them on paper towels, sprinkling with salt, and letting them sit for 30 minutes to remove excess water.
  2. Heat a skillet over medium-high heat and add olive oil, shrimp, and minced garlic. Cook shrimp until bright pink, about 1-2 minutes per side, then set aside.
  3. In the same skillet, add butter, cream cheese, Parmesan, heavy cream, red pepper flakes, and season with salt and pepper. Stir until the cheese melts.
  4. Add the shrimp and zucchini noodles to the skillet, stirring to coat. Cook for 3-4 minutes until the zucchini softens.
  5. Garnish with parsley before serving.
