Creamy Garlic Prawns

The sauce

raw whole cashews

For the rest

bone broth or chicken stock

garlic, minced

Instructions
- Make the sauce by blending all sauce ingredients until smooth and creamy, then set aside.
- Mince garlic, spiralize zucchini, and chop parsley if using.
- Pat shrimp dry and heat avocado oil in a skillet over medium heat.
- Cook shrimp for 1-2 minutes on each side until cooked through, then remove from skillet.
- In the same skillet, reduce heat to low and add bone broth and minced garlic to deglaze the pan.
- Add the sauce and zucchini noodles, stirring continuously for 2-3 minutes to heat.
- Return shrimp to the pan and toss with the sauce and zoodles, cooking for another 1-2 minutes until zoodles are tender.
- Serve topped with chopped parsley if desired.
