Creamy Garlic Prawns

Ingredients

The shrimp

  • 2 lbs large shrimp, peeled and deveined
  • 2 tbsp avocado oil
  • 2 medium-small zucchini, spiralized

The sauce

  • 1 cup water
  • 1 whole lemon, juice of
  • 2 cups raw whole cashews
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1 tsp ground black pepper
  • ½ tsp sea salt

For the rest

  • 1 cup bone broth or chicken stock
  • 4 cloves garlic, minced
  • to taste Parsley, chopped (optional garnish)

Instructions

  1. Make the sauce by blending all sauce ingredients until smooth and creamy, then set aside.
  2. Mince garlic, spiralize zucchini, and chop parsley if using.
  3. Pat shrimp dry and heat avocado oil in a skillet over medium heat.
  4. Cook shrimp for 1-2 minutes on each side until cooked through, then remove from skillet.
  5. In the same skillet, reduce heat to low and add bone broth and minced garlic to deglaze the pan.
  6. Add the sauce and zucchini noodles, stirring continuously for 2-3 minutes to heat.
  7. Return shrimp to the pan and toss with the sauce and zoodles, cooking for another 1-2 minutes until zoodles are tender.
  8. Serve topped with chopped parsley if desired.
