Ingredients

The shrimp and sauce

  • 1 pound raw shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 4 tablespoons dry white wine
  • 1 tablespoon green onions, chopped
  • 1 teaspoon oregano
  • ¼ teaspoon paprika
  • salt and pepper to taste

The vegetables

  • 2 zucchini spiralized
  • ½ red bell pepper sliced
  • ¼ cup cherry tomatoes
  • 12-15 pieces Kalamata olives
  • ¼ cup feta cheese

The oil

  • 2 tablespoons extra virgin olive oil

Instructions

  1. Preheat the oven to 400°F.
  2. Spiralize the zucchini.
  3. In a medium bowl, combine the shrimp, olive oil, garlic, oregano, paprika, wine, salt, and pepper, and mix well.
  4. On a sheet pan lined with foil, arrange the zucchini, red bell pepper strips, tomatoes, green onions, olives, feta cheese, and shrimp.
  5. Drizzle the shrimp mixture over the arranged ingredients and cover the pan with another piece of foil.
  6. Bake for 10-15 minutes until the shrimp is pink and the vegetables are tender.
  7. Allow to cool before serving.
