Heirloom Tomato and Peach Caprese Salad

Ingredients

The salad

  • 1 large Heirloom Tomato
  • 1 cup ripe Cherry Tomatoes
  • 1 large ripe Peach
  • 4 oz. fresh Mozzarella Cheese
  • 1/3 cup Pickled Red Onion
  • 1/2 cup fresh Basil Leaves
  • to taste Extra Virgin Olive Oil
  • to taste flaky Sea Salt
  • to taste freshly cracked Black Pepper
  • to taste Balsamic Glaze

Quick Pickled Red Onions

  • 1/3 cup thinly sliced Red Onion
  • 2 tbsp. Red Wine Vinegar
  • to cover cup warm Water
  • a pinch Sugar
  • a pinch Salt

Instructions

  1. Prepare the quick pickled red onions by combining the ingredients in a jar and letting them rest for 15 minutes.
  2. Slice the heirloom tomato and arrange the slices on a plate.
  3. Halve the cherry tomatoes and scatter them over the tomato slices, then season with salt and drizzle with olive oil.
  4. Let the tomatoes marinate for about 15 minutes.
  5. Peel and slice the peach, then scatter the slices over the marinated tomatoes.
  6. Tear the mozzarella into pieces and distribute them over the salad.
  7. Add the pickled red onions and fresh basil leaves on top.
  8. Drizzle with balsamic glaze and finish with salt and pepper before serving.
