Instructions
- Prepare the quick pickled red onions by combining the ingredients in a jar and letting them rest for 15 minutes.
- Slice the heirloom tomato and arrange the slices on a plate.
- Halve the cherry tomatoes and scatter them over the tomato slices, then season with salt and drizzle with olive oil.
- Let the tomatoes marinate for about 15 minutes.
- Peel and slice the peach, then scatter the slices over the marinated tomatoes.
- Tear the mozzarella into pieces and distribute them over the salad.
- Add the pickled red onions and fresh basil leaves on top.
- Drizzle with balsamic glaze and finish with salt and pepper before serving.
