Ingredients

The base

  • 1 tbs olive oil
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp salt

The main ingredients

  • 28 oz can diced tomatoes
  • 4 cups cooked beans (pinto, black, kidney)
  • 2 cups fresh or frozen corn kernels
  • 1 medium bell pepper, chopped (or 4 oz can diced green chilis)

Instructions

  1. Heat the olive oil in a large pot over medium heat and sauté the chopped onion until soft.
  2. Add the chopped celery and continue to sauté for a few more minutes.
  3. Stir in the chili powder, cumin, smoked paprika, and salt.
  4. Add the diced tomatoes, cooked beans, corn, and bell pepper to the pot and stir well.
  5. Bring the mixture to a simmer and cook over medium-low heat for about 20 minutes.
  6. Serve the chili with optional toppings like scallions, cheese, sour cream, or tortilla chips.
