Instructions
- Heat the olive oil in a large pot over medium heat and sauté the chopped onion until soft.
- Add the chopped celery and continue to sauté for a few more minutes.
- Stir in the chili powder, cumin, smoked paprika, and salt.
- Add the diced tomatoes, cooked beans, corn, and bell pepper to the pot and stir well.
- Bring the mixture to a simmer and cook over medium-low heat for about 20 minutes.
- Serve the chili with optional toppings like scallions, cheese, sour cream, or tortilla chips.
