Ranch Chicken Meal Prep

The dressing
Instructions
- Preheat the oven to 400ºF and clean and dice the potatoes into ¾" pieces.
- In a bowl, mix the Parmesan, garlic powder, paprika, and ¼ tsp salt, then coat the potatoes with 1 Tbsp cooking oil and the seasoning mixture.
- Spread the potatoes on a baking sheet and roast for 30 minutes, stirring halfway through.
- Prepare the broccoli by drizzling it with 1 Tbsp cooking oil, adding ¼ tsp salt and pepper, and tossing to coat.
- Spread the broccoli on a baking sheet and roast for about 20 minutes, stirring halfway through.
- Fillet the chicken breast into thinner pieces and season both sides with garlic herb seasoning.
- Heat a skillet over medium heat, add 1 Tbsp cooking oil, and cook the chicken for about 5-6 minutes on each side until browned and cooked through.
- Let the chicken rest for five minutes before slicing it into strips.
- Divide the roasted potatoes, broccoli, and sliced chicken into four meal prep containers.
- Fill small containers with 2 Tbsp ranch dressing each and refrigerate until ready to eat.
