Ranch Chicken Meal Prep

Ingredients

The vegetables

  • 2 lbs. russet potatoes
  • 1 lb. broccoli florets

The chicken

  • 1 lb. boneless, skinless chicken breast
  • 1 Tbsp garlic herb seasoning

The seasoning and oil

  • cup grated Parmesan
  • ½ tsp garlic powder
  • ¼ tsp paprika
  • 3 Tbsp cooking oil
  • ½ tsp salt
  • ¼ tsp pepper

The dressing

  • 8 Tbsp ranch dressing

Instructions

  1. Preheat the oven to 400ºF and clean and dice the potatoes into ¾" pieces.
  2. In a bowl, mix the Parmesan, garlic powder, paprika, and ¼ tsp salt, then coat the potatoes with 1 Tbsp cooking oil and the seasoning mixture.
  3. Spread the potatoes on a baking sheet and roast for 30 minutes, stirring halfway through.
  4. Prepare the broccoli by drizzling it with 1 Tbsp cooking oil, adding ¼ tsp salt and pepper, and tossing to coat.
  5. Spread the broccoli on a baking sheet and roast for about 20 minutes, stirring halfway through.
  6. Fillet the chicken breast into thinner pieces and season both sides with garlic herb seasoning.
  7. Heat a skillet over medium heat, add 1 Tbsp cooking oil, and cook the chicken for about 5-6 minutes on each side until browned and cooked through.
  8. Let the chicken rest for five minutes before slicing it into strips.
  9. Divide the roasted potatoes, broccoli, and sliced chicken into four meal prep containers.
  10. Fill small containers with 2 Tbsp ranch dressing each and refrigerate until ready to eat.
