Ingredients

  • 2 large eggs
  • ⅔ to ¾ cup smooth creamy almond butter
  • ½ cup fine raw sugar or sugar substitute
  • ¼ cup non-dairy milk
  • 1 teaspoon vanilla extract
  • ¼ cup gluten-free 1:1 baking flour
  • 6 tablespoons Dutch cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • ½ cup dark chocolate chips
  • 1 cup grated zucchini

Instructions

  1. Preheat the oven to 350°F and line an 8x8 baking dish with parchment paper.
  2. In a medium bowl, whisk together the eggs, almond butter, sugar, milk, and vanilla until smooth.
  3. In a separate bowl, whisk the flour, cocoa powder, baking powder, and salt until combined.
  4. Add the dry ingredients to the wet ingredients and mix until smooth.
  5. Fold in the chocolate chips and shredded zucchini.
  6. Transfer the batter to the prepared baking dish and spread evenly.
  7. Bake for 22 to 26 minutes, or until a toothpick inserted into the center comes out almost clean.
