Creamy Chicken Caesar Lasagna

Ingredients

The sauce

  • 2 tablespoons butter
  • 3 tablespoons flour
  • 1 ½ cups milk
  • 4 ounces light cream cheese
  • ½ teaspoon salt
  • to taste ground black pepper
  • ½ cup Marzetti Simply Dressed Caesar Dressing
  • ½ cup Parmesan cheese

The lasagna

  • 9 lasagna noodles
  • 3 cups cooked, shredded chicken
  • 3 cups Mozzarella cheese
  • 3 cups chopped spinach or kale
  • ½ cup sun dried tomatoes packed in oil

Instructions

  1. Melt the butter in a pan over medium-high heat and stir in the flour, cooking for 2-3 minutes.
  2. Gradually add the milk, stirring until smooth and creamy, then whisk in the cream cheese, Parmesan, and Caesar dressing.
  3. Cook the lasagna noodles according to the package instructions and add the shredded chicken to the sauce, keeping it on low heat.
  4. Grease a 9x13 inch pan and preheat the oven to 375°F.
  5. Layer 3 lasagna noodles in the pan, followed by half of the chicken mixture, 1 ½ cups of kale, ¼ cup of sun-dried tomatoes, and 1 cup of mozzarella.
  6. Repeat the layers, finishing with another layer of noodles and the remaining mozzarella on top.
  7. Cover the lasagna with greased foil and bake for 30 minutes, then remove the foil and bake for an additional 5-10 minutes to brown the cheese.
  8. Let the lasagna stand for 10 minutes before cutting.
