Ingredients

The noodles

  • 8 ounces cream cheese
  • 2 cups mozzarella cheese, shredded
  • ½ cup parmesan cheese
  • 3 large eggs

The filling

  • 1 large onion, chopped
  • 1 clove garlic, minced
  • 1 pound ground beef
  • ¾ cup marinara sauce
  • cups ricotta cheese
  • cups mozzarella cheese, shredded

Instructions

  1. Preheat the oven to 180C/350F and line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, combine cream cheese, mozzarella, and parmesan cheese, microwaving in 30-second intervals until melted.
  3. Whisk in the eggs until a smooth batter forms, then transfer to the lined sheet and bake for 15 minutes until edges are firm.
  4. In a non-stick pan, heat oil over medium heat and sauté onions and garlic for 5 minutes.
  5. Add ground beef and cook until no longer pink, then stir in marinara sauce and cook for another 5 minutes.
  6. Assemble the lasagna in an 8x8-inch pan, layering the keto noodles, ricotta, meat sauce, and mozzarella cheese until all ingredients are used.
  7. Bake the assembled lasagna for 30-35 minutes until golden brown and bubbling, then let cool for 5 minutes before serving.
