Instructions
- Preheat the oven to 180C/350F and line a baking sheet with parchment paper.
- In a microwave-safe bowl, combine cream cheese, mozzarella, and parmesan cheese, microwaving in 30-second intervals until melted.
- Whisk in the eggs until a smooth batter forms, then transfer to the lined sheet and bake for 15 minutes until edges are firm.
- In a non-stick pan, heat oil over medium heat and sauté onions and garlic for 5 minutes.
- Add ground beef and cook until no longer pink, then stir in marinara sauce and cook for another 5 minutes.
- Assemble the lasagna in an 8x8-inch pan, layering the keto noodles, ricotta, meat sauce, and mozzarella cheese until all ingredients are used.
- Bake the assembled lasagna for 30-35 minutes until golden brown and bubbling, then let cool for 5 minutes before serving.
