Easy Gluten Free Blueberry Muffins

Ingredients

  • 4 eggs eggs
  • ¼ cup butter, ghee or palm shortening
  • tsp liquid stevia (optional)
  • ¼ cup honey
  • cup arrowroot flour
  • cup coconut flour
  • ½ tsp sea salt
  • ½ tsp baking soda
  • 1 and ¼ cups blueberries

Instructions

  1. 1. Combine all ingredients except blueberries in a mixing bowl and beat with a mixer.
  2. 2. Let the mixture rest for about 5 minutes.
  3. 3. Fold the blueberries into the batter.
  4. 4. Fill unbleached muffin cups almost full.
  5. 5. Bake at 350°F for about 24 minutes.
