Spicy Ahi Poke Bowls

Ingredients

The poke

  • 1 lb sushi-grade ahi tuna
  • ¼ medium yellow onion, very thinly sliced
  • 1 each green onion, thinly sliced
  • 3 Tbsp paleo mayonnaise
  • tsp sambal oelek
  • 1 tsp lemon juice, freshly squeezed
  • ½ tsp sea salt

The base

  • 2 cups cooked black rice

The toppings

  • 1 Tbsp toasted sesame seeds
  • 1 each avocado, sliced

Instructions

  1. Cook the black rice according to package directions and set aside.
  2. Cut the ahi tuna into 1-inch cubes and place in a mixing bowl.
  3. Add the sliced yellow and green onions to the bowl with the tuna.
  4. In a separate bowl, whisk together the mayonnaise, sambal oelek, lemon juice, and sea salt.
  5. Pour the mayonnaise mixture over the tuna and onions, and gently mix to coat.
  6. Cover and let it marinate in the refrigerator for 30 minutes.
  7. Serve the poke over black rice, topped with toasted sesame seeds and sliced avocado.
