Ingredients

The marinade

  • 1 lb Sushi grade ahi tuna (cut into 1/2-inch pieces)
  • ¼ cup Coconut aminos (or low sodium soy sauce)
  • 2 tbsp Honey (or sugar free honey)
  • 1 tbsp Sesame oil

The bowl

  • 2 cups Cooked white rice
  • 1 medium Avocado (thinly sliced or diced)
  • 1 cup Pineapple (diced into 1/2-inch pieces)
  • 1 cup Cucumbers (thinly sliced)
  • 1 cup Radishes (thinly sliced)
  • ¼ cup Spicy mayo
  • to taste Green onions (sliced thinly, optional, for garnish)
  • to taste Sesame seeds (optional, for garnish)

Instructions

  1. Whisk together coconut aminos or soy sauce, honey, and sesame oil in a medium bowl.
  2. Add the tuna to the marinade and toss to coat. Cover and refrigerate while preparing the other ingredients.
  3. Assemble each of 4 bowls starting with ½ cup of cooked white rice as the base, followed by ¼ of the avocado, ¼ of the pineapple, ¼ of the cucumbers, ¼ of the radishes, and ¼ of the ahi tuna.
  4. Drizzle each bowl with 1 tablespoon of spicy mayo.
  5. Garnish with green onions and sesame seeds if desired.
