Ingredients

The Ahi Tuna

  • 2 tsp Lime juice
  • 2 tsp Sesame oil
  • 1 lb Sushi grade tuna (cut into bite-size pieces)

The Cauliflower Rice

  • 12 oz Cauliflower rice (fresh or frozen)
  • 2 tbsp Avocado oil
  • ½ tsp Sea salt
  • ¼ tsp Black pepper

The Poke Bowls

  • 1 medium Avocado (sliced thinly)
  • 1 cup Cucumbers (sliced thinly)
  • 1 cup Radishes (sliced thinly)
  • ¼ cup Spicy mayo (to taste)
  • to taste Green onions (sliced thinly, optional, for garnish)
  • to taste Sesame seeds (optional, for garnish)

Instructions

  1. Whisk together coconut aminos, lime juice, and sesame oil in a medium bowl, then toss in the tuna and refrigerate.
  2. Cook the cauliflower rice according to your preferred method.
  3. Prepare the spicy mayo sauce and transfer it to a squeeze bottle or zip lock bag.
  4. Divide the cooked cauliflower rice into bowls, topping each with cucumbers, radishes, avocado, and marinated tuna.
  5. Drizzle the spicy mayo over the bowls and garnish with green onions and sesame seeds if desired.
