Ingredients

The sushi bake

  • 1 ½ cups Sushi Rice, cooked
  • 1 ½ pounds Salmon, cooked
  • ½ cup Low Sodium Soy Sauce or Coconut Aminos
  • 2 tablespoons Toasted Sesame Oil
  • 3 tablespoons Kewpie Mayo
  • 1 tablespoon Sriracha
  • 1 tablespoon Rice Vinegar
  • 1 8 ounce container Cream Cheese
  • 1 bunch Green Onions, chopped
  • ¼ cup Furikake Seasoning

For serving

  • as needed Nori Squares
  • as needed Tortilla Chips

Instructions

  1. Prepare the sushi rice according to package instructions and set aside.
  2. Broil the salmon on a lined baking sheet for 8 minutes or bake at 375°F for 15-18 minutes.
  3. Allow the salmon to cool, then shred it with a fork, removing the skin.
  4. In a bowl, combine the shredded salmon with soy sauce, sesame oil, kewpie mayo, sriracha, rice vinegar, cream cheese, green onions, and furikake. Mix well.
  5. Preheat the oven to 400°F and press the sushi rice into an even layer in an 8x8 or 9x11 baking dish.
  6. Spread the salmon mixture evenly on top of the rice and sprinkle with more furikake.
  7. Bake for 10 minutes, then broil for an additional 2-3 minutes.
  8. Remove from the oven and serve immediately with tortilla chips or nori squares.
