Ingredients

The Sushi Cups

  • pounds Salmon, skin removed and cubed
  • 1 pinch Sea Salt
  • 2 tablespoons Soy Sauce or Coconut Aminos
  • 2 tablespoons Kewpie Mayo
  • cups Cooked Sushi Rice
  • 1 teaspoon Rice Vinegar
  • 12 sheets Nori Squares

The Garnishes

  • 1 squeeze Kewpie Mayo
  • 1 tablespoon Sesame Seeds
  • ¼ cup Green Onions, chopped

Instructions

  1. Preheat the oven to 400°F and grease a muffin tin.
  2. In a bowl, combine cubed salmon, sea salt, soy sauce, and mayo, and mix well.
  3. In another bowl, mix the cooked rice with rice vinegar until coated.
  4. Prepare nori sheets and cut them if necessary to fit the muffin tin cavities.
  5. Place 2-3 tablespoons of the rice mixture into each nori sheet and fold them into the muffin tin.
  6. Top each nori cup with about 2 tablespoons of the salmon mixture.
  7. Bake for 15 minutes or until the salmon is cooked to your liking.
  8. Remove from the oven, add your garnishes, and serve.
