Ingredients

The sushi cups

  • 1 pound Shrimp, peeled, deveined, uncooked, and chopped into small pieces
  • cups Cooked Rice
  • 3 sheets Nori, cut into 12 squares
  • 1 pinch Sea Salt

The sauce

  • ½ cup Softened Cream Cheese
  • 3 tablespoons Kewpie Mayo
  • 1 teaspoon Sriracha
  • 2 tablespoons Soy Sauce or Coconut Aminos
  • 1 tablespoon Chives, chopped (for garnishing)

Instructions

  1. Prepare the rice according to the package instructions and set aside.
  2. Preheat the oven to 400°F.
  3. Peel and devein the shrimp if not already done, then chop them into small pieces and add a pinch of sea salt.
  4. In a separate bowl, mix the kewpie mayo, cream cheese, sriracha, and soy sauce or coconut aminos until fully combined.
  5. Pour the sauce over the shrimp and mix until coated.
  6. Cut the nori sheets into squares and place them into a muffin tin.
  7. Press 1-2 tablespoons of rice into each nori sheet.
  8. Scoop 1-2 tablespoons of the shrimp mixture into each nori cup.
  9. Bake the muffin tin in the oven for 15 minutes, then broil for 2 minutes until the tops are crispy.
  10. Remove from the oven, garnish with spicy mayo and chopped chives, then serve.
