Viral Crispy Shrimp Sushi Cups

The sauce

Instructions
- Prepare the rice according to the package instructions and set aside.
- Preheat the oven to 400°F.
- Peel and devein the shrimp if not already done, then chop them into small pieces and add a pinch of sea salt.
- In a separate bowl, mix the kewpie mayo, cream cheese, sriracha, and soy sauce or coconut aminos until fully combined.
- Pour the sauce over the shrimp and mix until coated.
- Cut the nori sheets into squares and place them into a muffin tin.
- Press 1-2 tablespoons of rice into each nori sheet.
- Scoop 1-2 tablespoons of the shrimp mixture into each nori cup.
- Bake the muffin tin in the oven for 15 minutes, then broil for 2 minutes until the tops are crispy.
- Remove from the oven, garnish with spicy mayo and chopped chives, then serve.
